Normally, I’m a chocolate lover. I used to think baking without it was pretty much pointless.

Until, I discovered these sugar cookies.

These cookies have changed my view of sweets. After discovering this treasure, I’ve decided that this is a recipe every mom should have in her collection, no questions asked. Why? Because these cookies are perfect for any holiday, party, or that last minute treat your child informs you they need to bring for an event the next morning.

Now, these cookies are awesome because they only require ingredients that I always have on hand. No planning or last minute grocery trips are necessary. And oftentimes, I don’t even bother to decorate them at all, because they are soft, chewy, and perfect for shoveling into your mouth with reckless abandon as is. But whenever a holiday or special occasion rolls around and I’m asked to bring a treat, these cookies are my go-to.

Going to a Halloween party? Add orange sprinkles.
Attending a playdate for your little ones? Bring frosting and let the kiddos go crazy.
Participating in a Christmas cookie exchange? Add red and green M&Ms or stack them to make snowmen.

The possibilities are endless. These cookies are perfect for just about anything, and I’ve never made them without being asked for the recipe. So, here you have it, my friends:

Ingredients:

-2 ¾ cups flour
-1 teaspoon baking soda
-½ teaspoon baking powder
-½ teaspoon salt
-1 cup (2 sticks) butter, softened at room temp.
-1 ½ cups sugar
-1 egg (at room temp.)
-1 ½ teaspoon vanilla extract
-½ cup sugar (set aside for rolling cookies in)

Directions:

-Preheat oven to 350 degrees.
-In bowl, mix flour, baking soda, baking powder, and salt. Then set aside.
-In mixer, mix butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in dry ingredients.
-Roll rounded spoonfuls in sugar and place onto non-stick cookie sheet (do NOT grease) and bake 9-12 minutes or until VERY lightly browned on edges. Be careful not to overcook, or they will not stay soft and chewy.

And no, I never said they were good for you. Although, I’d argue that a cookie, or 2, or 4, is always good for the soul. Enjoy!
